George’s Tropical Chicken Sliders

                      Makes about 2 dozen sliders

Who doesn’t love little sandwiches? Whether you’re backyard entertaining, needing a quick suppertime idea or headed out to tailgate with friends, these little sliders will be a crowd pleaser… and they have been kid tested! For tailgating, “make & take” in crock pot or warming dish you can sit right on top of the grill so your guests can create their own as they like! These can be a bit messy, so have lots of napkins… and wet wipes come in handy too!

SAUCE: Combine all ingredients and whisk together.
1 cup George’s Special Sauce
1/2 cup George’s Original or Hot Sauce
2 tablespoons molasses
1 tablespoon soy sauce
3/4 cup pineapple juice*
1 teaspoon ground ginger
1 teaspoon garlic powder
1 teaspoon onion powder

about 2 pounds boneless chicken
1-15 ounce can pineapple rings in juice, drained*
1/4 cup brown sugar
fresh herb of choice (cilantro is nice!)
thin slices of white cheese like Swiss
2-12 count packs Hawaiian Sweet Rolls

*Add whatever juice you drain off pineapple rings.

Put cut chicken pieces into crock pot. Pour sauce over chicken and toss about to make sure all is covered. Cook until tender (2-4 hours on high or 6-8 on low). Shred with 2 forks. If desired, take chicken out of sauce; remove ½ cup of sauce and whisk in 2 tablespoons of cornstarch… whisk slurry back into sauce in crock pot and heat until thickened for a tasty dipping sauce.

At serving time, sprinkle pineapple rings with sugar (both sides). Lay rings onto hot grill or into skillet. Cook 1-2 minutes on each side until browned and glazed. Split rolls and grill alongside pineapple rings.

To make sliders:
Put some cilantro on bottom half. Top with ½ slice of pineapple, hot chicken, then slice of cheese (so the heat from the chicken melts the cheese). Top with other half of roll.

Helpful hint: If you cut chicken into smaller pieces, it will cut your cooking time way down! You can cook this on low or high, depending on your schedule. For game day, put in the pot at bedtime and let it cook overnight on low.

George’s Orange Marmalade Wings!

You can’t have a cookout without wings… and these will take the ho-hum out of yours and liven up your table! Folks will wonder why they never thought to marry our Special sauce with ORANGE….

About 2 dozen wings
a few tablespoons of salt and peppered flour
1 stick  butter
2 cups            George’s Special Sauce
1 cup              orange marmalade
1 cup              brown sugar
Preheat oven to 400.
Put wings into large foil baking pan and toss with seasoned flour, just to lightly coat.
In microwave safe bowl, melt butter. Whisk in sauce, marmalade and sugar. Pour sauce over wings and toss to coat. Turn wings skin side down. Place into hot oven and cook for 15 minutes. Reduce heat to 325 and continue cooking about 30 minutes, turning skin side up halfway through cooking time. If not browned enough, turn on broiler and quickly brown.
Serve from pan or put wings onto serving platter and serve alongside sauce.

TO GRILL: Prepare as noted, omitting flour. Grill wing until almost done. Dip into sauce and sear on each side to brown. Serve with heated sauce!
